homemade tomato sauce


Feeling super sleepy first from making the tomato sauce and second from eating maybe too much of it. It's the second time I attempted making tomato sauce and both times were quite successful :) I finally made something my entire family likes and is willing to eat in a heartbeat, and I did look up recipes but decided to come up with my own from what I read. This sauce is great with almost anything; I didn't feel like spaghetti so I just topped it over some zucchini and chicken for lunch.


Sadly the tomato sauce is already almost gone, but my stomach is feeling happy so it's all good.


Homemade Tomato Sauce

yields about 2 cups

Ingredients:

4 large tomatoes
1/2 onion finely diced
1 carrot finely diced
2 cloves garlic finely minced
1 sprig fresh parsley
4 tbs olive oil
4 tbs tomato paste
3 tbs water
1 tbs black vinegar
1 tsp sugar
salt and pepper to taste

Directions:

- Wash your tomatoes and cut X's across the top of each so that when you boil them, the skin will peel off easily. Prepare an ice bath in a large bowl.
- Bring a pot of water to a boil, place tomatoes inside and let them sit at medium high heat until the skin appears to be shrinking off the tomato. Remove and place immediately in the ice bath to let them cool.
- In another pot, bring the olive oil and garlic to a simmer at medium low heat. Then add in the onion and carrots and bring the pot to a medium. Allow this to simmer for at least 8-10 minutes or until the onions and carrots have softened. Season with salt and pepper to taste.
- Peel the skins off of the tomatoes and coarsely chop them. Remove the hard core of each of the tomatoes and toss them into the pot with the onions, carrots, and garlic.
- Add the water and tomato paste and stir until combined. Feel free to mash the tomato and break it up into smaller chunks.
- Put a lid on the pot and let simmer at medium low heat to allow the sauce to reduce down, about 25-30 minutes.
- Remove the lid, add the black vinegar, sugar, and parsley and stir. Let the sauce sit for a few more minutes on low heat. Then turn off the stove and serve.
